Novel products within, amongst others, the dairy industry have in many cases an aeration feature. One of the very fast growing markets of such a product is iced cappucino. This product is Ready-To-Use (RTU) and develops a foam layer upon shaking of the bottle or container. However, many of these product have only a marginal, unstable foam layer that disappears within the time of consumption. This depends not only on the recipe of the product but also on the aeration process during shaking. The latter involves a very small inefficient energy input to disperse the air in the headspace into the product leading to minimal foam formation.
